Apricot and Almond Bars

Delightfully chewy and sweet, these apricot and almond bars are the perfect snack or sweet treat! Filled with creamy almond butter, chewy apricots and crunchy toasted almonds, they’re both scrumptious and nutritious. A much better alternative to the packaged and highly processed snack bars that are promoted as a ‘healthy’ snack, but are really filled with additives, preservatives and refined sugars and oils. They are super quick and easy to make and easily made vegan by swapping the raw honey for pure maple or rice malt syrup.

½ cup (130g) almond butter

1/3 cup coconut oil, melted

1/3 cup raw honey, maple or rice malt syrup

2 tsp. vanilla extract

1 ½ cups (30g) puffed brown rice

½ cup (30g) shredded coconut

½ cup (70g) toasted almonds, chopped

½ cup (100g) unsulfured dried apricots, chopped

1 tsp. salt

 

1.     Whisk all wet ingredients together in a large mixing bowl.

2.     Add dry ingredients and stir until well combined.

3.     Tip mixture into a lined dish (I use a 2.6 litre glass Pyrex dish) and place into the fridge to set for at least 3 hours.

4.     Slice into bars and enjoy! Note: The bars are best kept refrigerated, as they will soften and not hold together as well if left at room temperature.
